Peanut Butter Spice Energy Balls!
Just made these today and they’re really yummy, very peanut buttery (my favorite) but the cinnamon and other spices give it a nice spicy/sweet taste too.Ingredients:
1/2 C peanuts
1/2 C peanut butter
1/4 C dry oatmeal (quick oats kind-not old fashioned)
1/4 C vanilla protein powder
2 T applesauce
2 T honey
1 T ground flaxseed
1 T ground chia seeds
1/2 t vanilla extract
~1/2 t of cinnamon, nutmeg, allspice, ginger, & salt (to taste)
a few crushed graham crackers
Directions:
In a food processor, process the peanuts until they form a finely chopped mixture, almost like flour. Add the oats and process to combine. Add the remaining ingredients (except for the graham crackers) and process to combine, until a dough ball forms. Use a tablespoon to scoop out the mixture and roll into balls. Crush the graham crackers into a fine powder and mix with some cinnamon, nutmeg, & allspice, and roll the balls in the mixture to coat. Keep in refrigerator.
Makes about 20 balls
